Zaleti are typical Venetian sweets, similar to soft and fragrant cookies. Their preparation is simple and requires few ingredients. They are made with finely ground cornmeal, flour, butter, sultana raisins, sugar, vanilla baking powder, and egg yolks. Zaleti are then dusted with powdered sugar and lightly golden in the oven. These treats are perfect to enjoy at any time of the day, accompanied by a cup of tea or coffee.
Soak the raisins in warm water
Beat the egg yolks with the sugar until they are fluffy and pale
Sift together the cornmeal with the flour, baking powder, and salt
Melt the butter without letting it sizzle
Place the flours in a bowl and incorporate the butter, then the eggs beaten with sugar
Finally, add the well-drained raisins and work the dough with a wooden spoon, perfectly blending all the ingredients
In the end, it should be homogeneous and not excessively firm
If you have difficulty working it, soften it with a few tablespoons of milk or water
Then shape it into 2 logs about 4 centimeters in diameter
Cut them into pieces 6 centimeters long
Shape them into diamonds with your hands
Place them on the buttered baking sheet, bake at 180 degrees, and cook for about 12 minutes
Serve the zaleti cold, dusted with powdered sugar
