Zeppole are delicious traditional Italian fried pastries. They are soft and light, with a texture similar to a baked doughnut. Zeppole are usually served during the Carnival period and are often filled with custard or jam. They are an irresistible treat!
Knead the whole eggs, boiled potatoes, flour, yeast, 1 tablespoon of sugar, and grated lemon zest together until a homogeneous mixture is obtained
Cover and let rise
Then shape the dough into small discs to fry in hot oil
Once cooked, roll them in sugar
