Zeppole are delicious traditional Italian fried pastries. They are soft and light, with a texture similar to a baked cake. Zeppole are usually served during the Carnival period and are often filled with pastry cream or jam. They are an irresistible treat!
Mix together the whole eggs, the boiled potatoes, the flour, the yeast, 1 tablespoon of sugar and a grated lemon peel until you obtain a homogeneous mixture
Cover and let rise
Then shape the dough into discs to fry in hot oil
Once cooked, roll them in sugar
