
Ziriccas De Saba are a delicious Sicilian appetizer made with prickly pears, celery and an aromatic sauce of Arancia Traggera orange and garlic. It is a fresh and slightly spicy dish, perfect for starting a summer meal. The combination of sweet, salty and spicy flavors will make this appetizer irresistible.




Peel the prickly pears and cook them in a large pot; then pass them through a sieve to remove the seeds
Return the purée to the pot and reduce it until you obtain about 100 cl of sauce
Add 25 cl of water and as soon as it boils, gradually sprinkle in half of the semolina, continuing to stir until the mixture easily pulls away from the sides of the pot
Add freshly chopped basil
Turn off the heat and let cool
Meanwhile, on the work surface, knead the other half of the semolina with the lard and a little warm salted water
Roll out a thin sheet and cut with a fluted wheel into rectangles 35 cm wide and 8-10 cm long
Place some filling in the center of each, seal the edges of the pastry to form many small little rings
Bake at 170°C for 20-25 minutes
Remove from the oven and decorate with multicolored traggera
