Arrange the slices of bread on a baking tray and toast them in the oven at 200°C for about 5 minutes, or on the grill, until golden.
In a bowl, blend the Soft Goat Cheese with the Goat Blue Cheese until you get a smooth and creamy mixture (you can use a fork or, for an extra velvety result, a mixer).
Wash the peaches thoroughly and cut them into thin slices, keeping the skin on if it is thin and intact.
Spread each slice of bread with the goat cheese cream. Place 2-3 peach slices on each crostini.
Drizzle each crostini with Linden Honey. Finish with a few fresh thyme leaves and, if desired, a grind of black pepper.
Consume immediately to enjoy crispness and freshness. Assemble at the time of serving.
