Wash and dry the cucumbers. Slice them thinly lengthwise with a mandoline or a vegetable peeler to obtain regular ribbons.
In a mixer, blend the hummus with the Rustic Sweet Mixed Cheese until you get a smooth and spreadable cream. Add a drizzle of oil, salt, pepper, and half of the grated lemon zest.
Lay a slice of cucumber on a surface, spread a thin layer of the cheese and hummus cream, then gently roll it up into a roll. Repeat with all the ribbons.
Place the rolls on a serving plate. Sprinkle with sesame seeds, the remaining lemon zest, and fresh parsley leaves.
Drizzle with a very light swirl of extra virgin olive oil and a grind of black pepper.
