Preparation

  1. STEP 1 OF 4

    Slice the eggplants thinly lengthwise. Brush with oil and grill on a hot plate for 2-3 minutes on each side until soft and slightly golden. Let cool.

  2. STEP 2 OF 4

    In a mixer, blend the Goat Blue Cheese well with the sheep cheese. Add coarsely chopped walnuts, torn mint leaves, lemon juice (optional), a drizzle of oil, salt, and pepper. Mix until you get a creamy and fragrant filling.

  3. STEP 3 OF 4

    Place a spoonful of cream at one end of each eggplant slice and gently roll to form the rolls. Arrange on a serving plate.

  4. STEP 4 OF 4

    Garnish with a few mint leaves and a drizzle of extra virgin olive oil. For a social touch, add some walnut granules and, if you want to impress, some White Condiment Pearls or a drop of Acacia Honey for contrast.
