A sophisticated and surprising appetizer that combines the creaminess of avocado with the aromatic strength of goat blue cheese, with a crunchy and sweet finish from the walnuts. Perfect for those who love bold contrasts and intense flavors.
In a mixer, blend the Goat Blue Cheese with a few drops of milk until you obtain a cream. If necessary, add a little fresh cream to soften.
Add the coarsely chopped walnuts, a dash of black pepper, and adjust the salt. Mix well.
Cut the avocado in half, remove the pit, and drizzle with a few drops of lemon juice to prevent it from browning.
If you wish, you can slightly scoop out the flesh and add it to the cheese cream to make it even richer.
Fill the center of each avocado half with the blue cheese and walnut cream.
Garnish with a whole walnut kernel and, if you like, a small cube of blue cheese to highlight the main ingredient.
Drizzle a little acacia honey over the cream for a sweet and enveloping note.
Store in the refrigerator for a maximum of 2 hours already assembled (covered). It is recommended to prepare and assemble shortly before serving.
