- Eggplant pulp

25g25g - Maple syrup or sugar

50g50g - Baking soda

Preparation
- STEP 1 OF 4
Cook the eggplants in the oven or air fryer at 175°C for 10 minutes, let them cool and extract the pulp.
- STEP 2 OF 4
Add all the ingredients.
- STEP 3 OF 4
Blend until the ingredients are well combined.
- STEP 4 OF 4
Spread in a 20 cm baking pan and bake in the oven or air fryer at 175°C for 40 minutes.

The cake will be slightly bitter depending on the cocoa percentage in the chocolate; you can choose to add sugar or more sugar if you prefer a sweeter cake.
