
Gluten-free focaccia with sourdough
Focaccia is a classic of Italian cuisine, soft and fragrant, perfect to enjoy on its own or accompanied by cold cuts and cheeses. With this recipe, you can prepare a delicious and genuine focaccia at home.
Ingredients
- Water
300mL300mL - Flour
500g500g - Salt
10g10g - Extra virgin olive oil
50mL50mL - Sourdough
130mL130mL - Fresh rosemary

Preparation

In a bowl, dissolve the yeast in warm water and let it rest for 5 minutes.
- STEP 2 OF 6
Gradually add the flour and knead until you get a homogeneous mixture.

Add the salt and oil and continue kneading until the dough is elastic and smooth.
- STEP 4 OF 6
Cover the dough with a cloth and let it rise in a warm place for about 7 hours, until it doubles in volume.

Drizzle some oil in the pan on the stove, spread the focaccia, apply the ombrisalli, EVO oil, and coarse salt, cover with the Magic Cooker lid, cook for 5 minutes on high heat.
- STEP 6 OF 6
Check, lower the heat and cook for another 4 minutes covered, turn and cook for another 4 minutes covered, on low heat. Serve with rosemary.

Focaccia is excellent both freshly baked and reheated. It keeps well in the refrigerator for about 3-4 days. To make the focaccia even more flavorful, you can add ingredients like olives, caramelized onions, cherry tomatoes, or rosemary. It is recommended to serve the focaccia with cooked ham, salami, fresh cheeses, or tomato and olive-based sauces.
