Preheat the oven to 180°C and prepare a baking sheet lined with parchment paper.
In a large bowl, mix the melted butter and sugar until creamy.
Add the egg and vanilla extract and mix well.
In another bowl, combine the oats, flour, baking soda, and salt. Mix the dry ingredients and then add them to the butter mixture.
Finally, add the raisins and mix until evenly distributed.
Using a spoon, scoop portions of dough and place them on the baking sheet, leaving space between each one.
Bake in the oven for 10-12 minutes or until the edges are golden brown.
Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Store in an airtight container at room temperature for 1 week.
