Subsequently, the honeycombs produced are taken away, using a blower to distance the bees without resorting to smoke or, worse, chemical substances to calm the bees! The extraction is done cold without the use of pre-heated knives. The centrifugation happens at low speed; at this point, we let the honey rest in the appropriate tanks for 15 days before bottling. To ensure further quality of our honey, we consider the health of the bees and their nourishment; in fact, more than 40% of the harvest is left inside the hive to allow the bees to feed during the colder months, avoiding feeding them with sugary substances other than their own honey. 100% Basilicata.
