It is raw honey, unpasteurized, which preserves intact aroma, enzymes, fragrance, and all its natural properties. The color varies from golden to dark brown depending on the flowers foraged during the season. The consistency is creamy, with a fine and natural crystallization. The taste is rich, aromatic, never cloying, and can range from sweet to slightly bitter depending on the essences present in the territory. The honey is extracted cold, always at temperatures below 40°C, without thermal treatments or pasteurization. The bees are never in contact with chemicals or antibiotics: when necessary, only natural thymol is used for the well-being of the hive. The honey extraction process is done without smoke and without stress: the combs are gently released with air blowers, in full respect of the bees.
