The honey extraction is done cold without using preheated knives. The centrifugation occurs at low speed and at this point, we let the honey rest in the appropriate maturation tanks for 15 days before packaging. To ensure further quality of our honey, we think about the health of the bees and their nourishment. In fact, more than 40% of the harvest is left inside the hive to allow the bees to feed during the coldest months, avoiding feeding them with sugary substances different from their own honey. 100% Basilicata Honey.
