Culinary art created with selected durum wheat with a high protein value of 13% and from our pasta-making art, this is how our Traditional Croissants "LaGranum" come to life. We produce pasta at an altitude of 700m a.s.l. within 72 hours from the grinding of the durum wheat to obtain the semolina, this to ensure all the organoleptic properties and scents of our fine Italian grains. The semolina is mixed with mountain water and bronze-drawn. The drying phase occurs at low temperature and statically for 12/36 hours (depending on the format); the result is a rough and porous pasta as traditional Italian demands and capable of ensuring the best cooking performance.
