Sour Ale 5.0% Chrysopolis is a spontaneously fermented beer produced by Birrificio del Ducato in the disused plant of Roncole Verdi, in the province of Parma. Chrysopolis is a beer with a unique and complex character, distinguished by its balanced acidity and aromatic complexity. Fermented directly in used wine barrels, it has never seen steel. It presents a beautiful golden color and has very clear citrus notes, developing its complexity with hints of wine, wood, cellar, and citrus peel. On the palate, it is sour, powdery, fresh, and with mineral notes. Appearance: beer with a brilliant golden color, with a compact and persistent foam. Aroma: on the nose, it presents an intense and complex aroma, characterized by citrus, wine, woody, and mineral notes. The citrus notes are predominant, with hints of lemon, lime, and grapefruit, and there are also wine notes, with hints of Chardonnay and Sauvignon Blanc. In the background, woody, cellar, and mineral notes are perceived. Taste: on the palate, it is sour, fresh, and thirst-quenching. The body is light, and the finish is long and persistent. It is a beer that lends itself to being enjoyed on its own or paired with fish dishes, white meats, and fresh cheeses. Serving temperature: 8 °C.
