Thyme honey from the Iblei Mountains is indeed a prized product, known since ancient times for its properties, now recognized by the Slow Food Presidia. The leaves are particularly aromatic and just rubbing them lightly between your hands allows you to perceive their sweet, fresh-balsamic scent, intensified by the drying process. Iblei thyme, the result of labor inclusion In the heart of southeastern Sicily, the Iblei Mountains are a natural heritage rich in unspoiled biodiversity. On the rocky and sunny lands between the municipalities of Noto and Palazzolo Acreide, the cooperative has started Frutti degli Iblei, a social agriculture initiative dedicated mainly to the collection of wild herbs, such as thyme, and the cultivation of aromatic herbs. The thyme and other intensely fragrant herbs are lovingly cared for, harvested, processed, dried, and carefully packaged by skilled hands, in full respect of the ecosystem, to capture all the fragrance of our Sicily.
