Ispica sesame has always been known, sought after, and appreciated for its high quality. Today, cultivation is limited to a few hectares, farmed by a small number of producers who still use entirely manual farming techniques on small plots of land. Thanks to these characteristics, Ispica sesame has been recently recognized as a Slow Food Presidium. Among the varieties we cultivate in our fields, we have selected oregano, rosemary, sage, and thyme, which give the condiment a unique aroma, with an unmistakable scent of Sicily. Finally, the Gomasio with Herbs Dolci Evasioni is produced exclusively with salt from the salt pans within the WWF Nature Reserve of Trapani. This sea salt is precious for many reasons: the salt pans of Trapani and Paceco are among the last productive ones left in Sicily; the territory boasts an extraordinary natural, landscape, architectural, and ethnographic heritage; finally, Trapani sea salt contains more potassium and magnesium and less sodium chloride compared to other table salts. Gomasio Sweet Escapes Our laboratory team inside the prison of Syracuse carefully prepares this precious and unique product for the extraordinary combination of its ingredients, closely monitoring all steps: the grinding of the sesame and the salt must result in a medium grain size, neither too fine nor too coarse; roasting must keep temperatures and times under control to best preserve the properties of the sesame.
