They are in a wonderful balance: neither too strong nor too gentle, with the potential to further develop throughout their maturation. These eaux-de-vie are selected very early to allow them the necessary time for maturation and development of their overall potential before being used to create one of the most incomparable cognacs in its category. The maturation of Hennessy Very Special largely depends on the selection of new oak barrels exclusively from France, which give the cognac its intense expression. The maturation process is guided in the desired direction through the use of partially used barriques. This ensures the formation of warm and pleasant toasted notes that create a counterbalance without dominating the overall blending effect. It is a very dynamic maturation process during which the barriques are frequently exchanged. The younger eaux-de-vie are matured for 2 years. During this period, they are exposed to oxygen at regular intervals to support the formation of their typical crème brûlée and cane sugar aromas. Their vanilla notes give the cognac a creamy taste and emphasize the fruit. Blending is the final step in creating Hennessy Very Special.
