Xoriguer is made from wine alcohol and uses juniper from the Pyrenees as a creative botanical. It is distilled in four copper stills (the oldest is a 250-year-old Charente model) heated with direct wood fire following a centuries-old distillation process that has not been modified over the years. On the island, Xoriguer is used in the preparation of the pomada mix of Mahon gin, lemon juice, and sugar.
