The grapes are harvested at the ideal ripening moment, then destemmed and cold macerated. The subsequent pressing is carried out gently and progressively to extract the best part of the juice, the free-run must. The fermentation occurs slowly and at low temperatures, characterized by a refined bouquet of yellow-fleshed fruits, softened by spices and aromatic herbs that make it delicate and well-balanced. Eno-sensory Analysis: COLOR: Pale yellow, hazy to the eye. PERLAGE: Fine and persistent, hazy to the eye. AROMA: Delicate notes of citrus and white-fleshed fruits pleasantly mix with hints of bread crust and vanilla. TASTE: Dry, it feels creamy and intriguing in the mouth, all aromas heightened by a delicate and harmonious body.
