It is traditionally used by pastry chefs from the city of Bronte as an ingredient for ice creams, pastries, creams, and liqueurs, or for the tasty "pistachio cake" with sponge cake filled with chocolate. It is also the star of first and second courses, increasingly common on restaurant menus. Characteristics: Naturally produced, sun-dried, obtained from the shelling of the last harvest. It has a very slow growth and can only produce after about ten years from grafting. It flowers between April and May. The seed is unique and elongated, light green in color, rich in oil and proteins. The harvest of the fruits is biennial and is done in odd years, between the end of August and the beginning of September, by hand, dropping the fruits into a shoulder-carried container or with the aid of tarpaulins or nets.
