Description: The sweet green olives Nocellara del Belice D.O.P. are harvested while still green, firm, and fragrant at the beginning of October, from the sunny and enchanting olive groves of the Sicilian inland. Using the Castelvetrano method, within 12 hours of harvest, after selection and cleaning, the olives are soaked in caustic soda for about two weeks. This process helps to gently remove bitterness without affecting the fruit's flesh. Finally, the olives are rinsed with plenty of fresh water and preserved in brine for about three months before being destined for consumption. The sweet green olives Nocellara del Belice D.O.P.
