The must of the Red Wine Perricone Sicily, obtained from the gentle pressing of the grapes, ferments in steel containers at controlled temperature. The refinement that follows has a short duration and takes place in steel, and then continues, after bottling, with another 6 months of maturation in glass before being put on the market. The Red Wine Perricone Sicily announces itself to the eye with an intense, deep, and dark ruby color, at times impenetrable. The nose opens to an interesting scale of spicy notes, which gradually reveal touches of fruit in jam. The history that links this Sicilian winery to its territory is truly unique and is marked by the respect and awareness that producing wine in this environmental context is a responsibility as well as a source of pride. The highlight is certainly the winemaking department, which now allows processing grapes with the utmost respect for the integrity of the fruit, and the barrel room, with a total capacity, between barriques and large barrels, of about 50,000 liters. In this facility, the temperature and humidity of the air are kept constantly at ideal values. Also state-of-the-art is the bottling department, now housed in a dedicated room, where the new monobloc bottling machine and an innovative microfiltration system stand out, which allows bottling wines that have not undergone nerve-wracking clarifications and filtrations.
