<p><strong>Amarone della Valpolicella Tommasi</strong> is made from native grapes of the classic area of <strong>Valpolicella</strong> such as Corvina, Corvinone, Rondinella, and Oseleta. The vineyards from which these grapes are selected are all located in the high hills of <strong>Valpolicella</strong>: they are the La Groletta and Conca d’Oro Vineyards located on the hills of Sant’Ambrogio, in the classic-historical area of <strong>Valpolicella</strong>. The grapes that make up <strong>Amarone della Valpolicella Tommasi</strong> are hand-harvested after careful selection and placed in wooden crates for dehydration, which takes place in open and ventilated places with controlled humidity called fruttai. This drying process allows the grapes to concentrate their sugar and polyphenol content. Around the end of January, the grapes are pressed, and alcoholic fermentation with maceration takes place in temperature-controlled steel tanks for about 15 days at a temperature of about 28°C. Subsequently, <strong>Amarone della Valpolicella Tommasi</strong> is separated from the skins and transferred to 35 Hl Slavonian oak barrels where it rests for 3 years from the harvest. Afterwards, <strong>Amarone della Valpolicella Tommasi</strong> is blended and bottled.</p> Pairings: Amarone della Valpolicella Tommasi is a wine suitable for pairing with dishes based on red meats or game such as braised or roasted meats.
