Colatura di Alici Sapori di mare 100mL is a concentrate of the Mediterranean, the result of processing anchovies caught in the Mediterranean Sea. The Romans were the first to discover its potential, although they did not use exactly Colatura di Alici but a thick fish sauce called Garum. Colatura di Alici comes from the process of draining anchovies placed under salt in containers called terzigni. Colatura di Alici Sapori di Mare is excellent as a flavor enhancer in many traditional Italian dishes. Pairings: use in dishes with vegetables, broccoli, boiled potatoes. The colatura should be used instead of salt in a dose of about one tablespoon for every 100 g of pasta or other. The cooking water should not be salted either. It is recommended to proceed gradually until the right level of saltiness is reached.
