Barone Pizzini Franciacorta Riserva Bagnadore comes from the blend of the best base wines of the estate, sourced from the best-exposed vineyards of Barone Pizzini. The Chardonnay and Pinot Noir are harvested around mid-August and brought to the winery for gentle pressing. The musts ferment in barriques and stainless steel tanks for about 15 days at a temperature of 17°C. The Franciacorta base wines remain in aging for six months in barriques and steel before blending and bottling. Bottling occurs after the addition of sugars and yeasts that will lead to the second fermentation in the bottle, allowing the development of the typical Franciacorta bubbles. Barone Pizzini Franciacorta Riserva Bagnadore ages in the bottle for 72 months before disgorgement, during which the liqueur d'expedition used is composed only of the same Franciacorta Riserva wine without added sugars. Pairings: Barone Pizzini Franciacorta Riserva Bagnadore is excellent paired with both white meat and fish dishes, even very flavorful ones, given its structure. Perfectly paired with aged hard cheeses like Bagoss and Parmigiano Reggiano.
