The Capocollo of Suino Nero dei Nebrodi is made 100% from pork meat of the Suino Nero dei Nebrodi or Nero Siciliano breed native to the Nebrodi Mountains in Sicily. The Suino Nero dei Nebrodi has been raised in Sicily since ancient times, as there are fossil remains that testify to the presence of these pigs in Sicily already during the Greek domination. At that time, these animals were raised in herds that lived in the wild. Over time and with the changing environmental conditions of Sicily, the Suino Nero dei Nebrodi changed its physical conformation, becoming taller, more humped, and with a more elongated head. During its evolution, the Suino Nero dei Nebrodi also changed its eating habits, as Sicily, especially its hills, was rich in forests whose plants and fruits the Sicilian black pig fed on.
