The Ribolla Gialla pomace is extracted from the amphorae where alcoholic fermentation takes place after 6 months of aging and immediately taken to Rosà to the Capovilla distillery. Such a high-value raw material deserves to be treated with great respect, which is why Vittorio Capovilla opts for a double distillation process that takes place in a bain-marie in small copper stills. The distillate is then aged to facilitate the esterification process that will bring Capovilla Grappa di Ribolla Gravner 0.7L to a full and balanced taste. This balance is achieved after about 5 years of aging, after which the distillate is diluted with spring water to the desired balance and then bottled.
