Castelbelbo is a semi-aged soft cheese made from cow, sheep, and goat milk. Castelbelbo cheese is produced by the Altalanga dairy in Piedmont. A unique cheese, it features an edible white rind and a white interior that changes to straw yellow with aging. Castelbelbo is an aromatic cheese with a milky flavor and balsamic and freshly cut grass notes. Excellent cheese to enjoy on its own. Pairings: Castelbelbo is excellent enjoyed on its own, recommended pairing with Trento DOC, Franciacorta DOCG. Storage: Store in the refrigerator, cover the cut part with a cloth. Processing: The milk is allowed to acidify. In this cheese, very little calf rennet is used. The curd that forms is placed in special molds where the cheese is drained, followed by salting.
