The cooked ham La Senese by Pertus Prosciutti is made with Cinta Senese pork legs. In this cooked ham, Pertus does not add many preservatives like polyphosphates and antioxidants. The Cinta Senese leg is deboned and then cooked, resulting in a stunning and unique cooked ham. In fact, the Cinta Senese is one of the most flavorful pigs in the world, fed with acorns that make the meat tasty and sweet. The ham weighs about 10 kg; we recommend opening it and vacuum sealing it. Excellent when sliced thin, sweet and flavorful, one of the best cooked hams on the market. Cinta Senese meat has excellent dietary qualities due to the presence of unsaturated fatty acids Omega 3 and Omega 6, lard rich in oleic acid and polyunsaturated fatty acids. The fat is less dense and more fluid, allowing for a quicker diffusion of aromas, making it very pleasant on the palate. Pairings: The cooked ham Pertus is excellent consumed with bread, or as a base for many recipes, great with medium-aged cheeses and with Prosecco DOCG. Storage: Store in the refrigerator, cover the cut part with a cloth. Processing: Fresh legs from Cinta Senese Dop with foot are selected, divided into homogeneous batches based on weight, manually deboned, trimmed, and cleaned of excess muscle, fat, and rind, and injected with brine composed exclusively of water, salts, sugars, natural aromas without the addition of polyphosphates, gluten, and milk derivatives. The boiled aromas are produced using whole vegetables and spices. The legs are then massaged to fully absorb the brine and soften the muscle masses to facilitate the subsequent molding phase, which consists of placing the legs inside molds for cooking that takes place in steam ovens.
