Franciacorta Il Mosnel Saten is a wine produced with Chardonnay grapes by the Il Mosnel winery in Franciacorta. The vineyards are located in the designated areas in the municipality of Passirano, on the foothills of Monterotondo and Fantecolo with East – South/East exposure in the heart of the DOCG Franciacorta. The Chardonnay grapes are hand-harvested around mid-August and brought to the winery for pressing. The must ferments in temperature-controlled stainless steel tanks for about 10-12 days at low temperature and 40% in French oak barriques. The aging of the base Franciacorta wines continues until the spring after the harvest when they are blended to create Franciacorta Il Mosnel Saten. The wine is bottled with the addition of yeasts and sugars that allow the development of bubbles inside the bottle following the second fermentation. After a period of 36 months of bottle aging, the Franciacorta Il Mosnel Saten wine is disgorged, dosed, and released to the market.
