Limunì, the Limoncello of the South, is obtained from the alcoholic infusion of untreated lemon peels, ripened under the warm sun of Calabria. The lemons, coming from farms located near the Caffo Distillery, are processed on the same day as the harvest. To obtain the Limunì infusion, only the most aromatic part of the fruit is used, that is the yellow part of the peel (epicarp) infused in neutral alcohol.
