Monte Rossa Franciacorta Prima Cuvée Brut is the most representative wine of the Monte Rossa winery in Franciacorta, obtained from a cuvée of Chardonnay, Pinot Noir, and Pinot Blanc harvested around mid-August and brought to the winery for gentle pressing. The Monte Rossa philosophy dictates that each cru is vinified separately and that the yield in must does not exceed 55%, extracting only the most noble must suitable for the production of quality Franciacorta wine. After fermentation, the Franciacorta wines remain in refinement for 6 months before blending and bottling, which occurs after the addition of sugars and yeasts that will lead to the second fermentation in the bottle, producing the famous bubbles. After 24 months, the Monte Rossa Franciacorta Prima Cuvée Brut is disgorged, and a liqueur d'expedition is added to each bottle, characterizing this Franciacorta as Brut. Pairings: Monte Rossa Franciacorta Prima Cuvée Brut is an ideal wine to pair with appetizers and first courses based on fish, even raw.
