I Contadini is a family-run farm, now in its third generation, operating in the Apulia region, one of the most suitable areas for growing high-quality vegetables. Thanks to their experience and attention to local traditions, I Contadini produces Puntarelle alla Crudaiola, carefully selecting the sprouts of Catalonia Chicory and processing them without the addition of preservatives. The "Puntarelle" are the heart of the traditional Catalonia chicory salad, typical of the Apulia region. Transplanting takes place in October, while harvesting occurs in January and February. Our expert farmers manually remove the outer leaves and carefully cut the delicate sprouts, called "scattuni." These are then left to mature for a few days in brine before being preserved in oil, without the addition of aromas or spices.
