I Contadini is a family-run farm in its third generation, operating in the Apulia region, one of the best areas for growing high-quality vegetables. Thanks to their experience and attention to local traditions, I Contadini produce Puntarelle alla Crudaiola by carefully selecting the shoots of Catalogna chicory and processing them without adding preservatives. "Puntarelle" are the heart of the traditional Catalogna chicory salad, typical of the Apulia region. Transplanting takes place in October, while harvesting occurs in January and February. Our expert farmers manually remove the outer leaves and carefully cut the delicate shoots, called "scattuni". These are left to mature for a few days in brine before being preserved in oil, without adding any flavorings or spices. Pairings: to impress your guests, serve the "Puntarelle" with a tasty beef tartare. This contrast of flavors and textures will make your dish truly unique and surprising.
