The Tomato and Basil Fillets are only added with basil, salt, and extra virgin olive oil. The difficulty in production lies in the skill of the women who must peel and not damage the tomato before placing it in the jar. In fact, the Tomato and Basil Fillets are first blanched and peeled. Processing: Quarto dei Greci Tomato and Basil Fillets are made with freshly picked tomatoes. The selected tomatoes are washed and blanched in boiling water. Once cooked, they are peeled by very skilled operators who must not damage the shape of the tomato and only remove the skin. The fillet obtained at about 80°C is placed in containers with basil and salt, sealed hermetically, and pasteurized to make them sterile.
