Ricotta Forte di Pecora Nova Marte is a cheese made from sheep's milk, fermented and aged for at least 18 months, packaged in 100 g jars. Ricotta Forte is a typical Apulian product made by Nova Marte, presented in a creamy form with a white to yellowish color. Pairings: It is excellent consumed on warm bread or on first courses. Recommended wine: a structured red like Negramaro. Storage: keep in a cool, dry place. Processing: sheep's milk is inoculated with lamb whey starter as per Apulian tradition. Once the cheese curd is formed, it is broken and fermented before being placed in typical molds. This is followed by salting and an 18-month aging period.
