Robiola Bosina from Caseificio Alta Langa is a typical Piedmontese cheese produced in the provinces of Asti and Alessandria. For the production of this cheese, both sheep's milk and cow's milk are used. Considered a semi-aged cheese, it has a soft and moist texture, and as the aging process progresses (beyond 10 days), it develops remarkable aromas. With its unmistakable square shape and bold scents, it is delicate yet savory and flavorful on the palate; its creamy heart reveals pleasant aromas of butter and hay, while the light bloom of its tender rind imparts sensations of undergrowth.
