Description
Sedara Donnafugata is a fragrant and pleasant wine produced mainly with Nero d'Avola grapes. The name Sedara derives from Angelica Sedàra, the charming character from The Leopard. The vineyards are located around the Contessa Entellina estate at an altitude ranging from 200 to 600 meters above sea level and are characterized by loamy-clay soils rich in nutrients for the plant. The harvest takes place during the coolest hours of the day, and the grapes are brought to the winery for crushing. Alcoholic fermentation occurs in steel vats, lasting about 8-10 days at a temperature ranging between 25-28°C. Subsequently, Sedara Donnafugata is separated from the skins and transferred to other cement containers where it undergoes malolactic fermentation and matures for about 9 months before blending and bottling. Pairings: Sedara Donnafugata pairs excellently with first courses with meat sauces or even elaborate lasagna, and with second courses that are not particularly fatty with red meat. A curious pairing is also suggested with a lightly seared tuna fillet. Excellent with pecorino and traditional Sicilian cheeses.
