Valpolicella Ripasso Torre Orti
Vineyards: The vineyards are located between 300 and 350 meters above sea level with a northeast exposure. Guyot training system. Predominantly marl soil with layers of red earth. Harvest: The typical grapes of Valpolicella are used. The special soil of Marcellise gives high acidity to the grapes, which are harvested according to different ripening periods. Vinification: This wine is born from the traditional practice of RIPASSO, which involves re-passing the Valpolicella wine, produced in October, over the Amarone pomace obtained from dried Corvina, Corvinone, and Rondinella grapes. The two characters blend intimately during aging in small and medium-sized barrels. Pairings: Spelt soup, ribollita, grilled meats Alcohol content: 14.5% Vintage: 2023 Designation: Valpolicella Superiore Ripasso DOC
