The Pesca di Leonforte IGP is a typical fruit from the homonymous town located on the heights of Etna. It is a late peach, left on the tree until September before being harvested. To prevent damage, each peach is wrapped in paper until harvest; this also avoids the use of pesticides. The peach is yellow with red streaks and has a sweet taste. The Pesca di Leonforte is mainly used for making jams and canned peaches. The peaches are harvested from September to early November; only the best peaches are selected for canning. They are washed, cut, placed in glass jars, and covered with glucose syrup. Once sealed, the peaches are pasteurized briefly to keep them crisp when eaten.
