Technical characteristics Grape variety: 100% Pinot Noir Training system: Spur cordon, with a density of 5,000 vines per hectare Harvest: Manual, with careful selection of fully ripe bunches Vinification: First fermentation in steel with indigenous yeasts, followed by a brief maceration on the skins to obtain the rosé color. The sparkling process takes place in the bottle according to the ancestral method.
