Cultivation area The vineyards of Castello di Stefanago are located in Oltrepò Pavese, at an ideal altitude for the cultivation of red grape varieties. The company, certified organic, promotes sustainable practices to preserve biodiversity and enhance the territory. Technical characteristics Grapes: Mainly Croatina, Uva Rara, and Merlot, with varying proportions depending on the vintage. Vinification: The grapes, hand-picked at full ripeness, are destemmed and undergo a short maceration on the skins. Spontaneous fermentation occurs with indigenous yeasts in steel tanks. Aging: In steel tanks with periodic racking, followed by bottling in the spring following the harvest. Alcohol content: 13-14% (variable depending on the vintage). Tasting notes Color: Ruby red with violet reflections. Aroma: Intense and fruity, with notes of red fruits and fresh flowers. Taste: Persistent and smooth, with delicate tannins and a pleasant freshness.
