Description
A pure Riesling Renano that elegantly and authentically expresses the territory of Oltrepò Pavese. Cultivation area The San Rocco 2015 originates from the vineyard of the same name located at about 400 meters above sea level, in Oltrepò Pavese, Lombardy. The composite soil, rich in clay, sand, tuff, and saline residues, and the west exposure offer ideal conditions for the cultivation of Riesling Renano. Technical characteristics Grape variety: 100% Riesling Renano Vineyard: San Rocco, west exposure, altitude 400 m a.s.l. Training system: Guyot and spur cordon, to respectively confer body and fragrance, as well as acidity and freshness to the wine. Harvest: Manual with careful selection of the bunches. Vinification: Soft pressing of the grapes and spontaneous fermentation with indigenous yeasts in steel tanks. Aging: 12 months in large 15-hectoliter acacia wood barrels, followed by an additional 12 months in the bottle. Alcohol content: 13% Tasting notes Color: Deep straw yellow, bright and brilliant. Aroma: Elegant and complex, with hints of fresh fruit and flowers. Taste: Rich in character, savory, balanced, with fresh acidity and long persistence. Particular gastronomic pairings Perfect to accompany refined and aromatic dishes: Sushi and sashimi: The freshness and minerality of the wine enhance the delicacy of raw fish. Shrimp ceviche with citrus: The acidity of the wine matches the liveliness of the citrus marinade. Fresh goat cheeses with chestnut honey: The freshness of the wine balances the creaminess of the cheese and the sweetness of the honey. Lemon and rosemary risotto: The citrus notes and structure of the wine marry with the creaminess of the dish. Curiosity The San Rocco vineyard uses two training systems: Guyot and spur cordon. These confer complementary characteristics to the wine: the Guyot provides body and fragrance, while the spur cordon gives acidity and freshness, creating a balanced and complex Riesling.
