Description
A red wine of extraordinary structure and complexity, an authentic expression of the heart of Valpolicella, produced using organic and artisanal methods. Cultivation area Produced in the vineyards of Corte Bravi, located in the heart of Valpolicella, in Veneto. The area is characterized by a mild climate and varied soils that offer ideal conditions for the cultivation of the native varieties used in Amarone. Technical characteristics Grapes: 40% Corvina, 40% Corvinone, 15% Molinara, 5% Rondinella Vinification: The grapes, hand-picked, are dried for three months in wooden crates, according to the Amarone tradition. Spontaneous fermentation occurs with indigenous yeasts, followed by a maceration on the skins for about 10 days. Aging: 36 months in French oak barrels, followed by 12 months of aging in the bottle. Alcohol content: 16% Tasting notes Color: Ruby red with garnet reflections. Aroma: Intense and complex, with notes of cherry in spirit, dried plum, floral hints, toasted and elegant sweet spices. Taste: Rich and harmonious, with a balance between warmth, fruity freshness, silky tannins, and a long, persistent finish. Particular gastronomic pairings Ideal to accompany traditional dishes and bold pairings: Braised beef with Valpolicella and polenta: The elegance of the wine enhances the richness of the braised beef and the softness of the polenta. Amarone risotto with late radicchio: A symbolic dish of Venetian cuisine, which finds in the wine the ideal complement. Aged Monte Veronese cheese with chestnut honey: The complexity of the wine balances the savoriness of the cheese and the bittersweet sweetness of the honey. 70% dark chocolate with chili: An innovative pairing, where the spicy notes of the chocolate meet the intensity of the wine. Curiosities Corte Bravi adopts low-intervention winemaking practices, with spontaneous fermentations and minimal addition of sulfites.
