ENOZ - IL CHAOS 2023 | IGP Roccamonfina Primitivo

An artisanal wine that captures the essence of the volcanic terroir of Sessa Aurunca, combining tradition and innovation. Cultivation area The vineyards are located in Sessa Aurunca, in the province of Caserta, Campania, at the foot of the extinct volcano of Roccamonfina, in the ancient territory of Ager Falernus. The varied soils, composed of clay, sand, volcanic lapilli, and hard rock, are located about 280 meters above sea level, offering ideal conditions for the cultivation of Primitivo. Cultivation practices The Enoz winery follows an organic and biodynamic approach, ensuring sustainable vineyard management. In the winery, fermentations are spontaneous with indigenous yeasts, without clarifications or filtrations, and the aging takes place in terracotta amphorae, a method that recalls ancient winemaking traditions. Technical characteristics Grape variety: 100% Primitivo Designation: IGP Roccamonfina Rosso Vinification: Spontaneous fermentation in amphora with skin maceration for about 15 days. Aging: 10 months in terracotta amphorae, followed by 3 months in bottle. Alcohol content: 13% Tasting notes Color: Bright ruby red. Aroma: Elegant floral notes of peony and violet, accompanied by fruity hints of red berries, plum, and currant, with a hint of chocolate and a light toastiness. Taste: Fresh and balanced, with soft tannins and a pleasant persistence. Particular food pairings A versatile wine that pairs perfectly with: Grilled red meats: The acidity balances the succulence of the meats. Roasts and game: Ideal with intense and complex flavors. Aged cheeses: Perfect with well-aged pecorino and caciocavallo. Mediterranean cuisine: Excellent with flavorful first courses, such as Neapolitan ragù pasta or eggplant parmigiana. Curiosities The name "Il Chaos" reflects Enoz's natural and non-interventionist approach, which aims to let the wine develop spontaneously, respecting the territory and the grape variety. The aging in amphora helps to enhance the purity and authenticity of the Primitivo, offering a unique tasting experience.
