An elegant and authentic white wine that celebrates Fiano and the volcanic terroir of Sessa Aurunca. Cultivation area The vineyards are located in Sessa Aurunca, in the province of Caserta, Campania, in the ancient territory of Ager Falernus, at the foot of the extinct volcano of Roccamonfina. The volcanic soils, composed of clay, hard rock, sand, and lapilli, and the altitude of about 280 meters above sea level, give the wine a distinctive minerality and freshness. Cultivation practices The Enoz winery follows organic and biodynamic cultivation methods, promoting sustainable and environmentally friendly agriculture. In the winery, fermentations are spontaneous with indigenous yeasts, without clarifications or filtrations. Aging in terracotta amphorae recalls ancient traditions and enhances the essence of the grape variety. Technical characteristics Grape variety: 100% Fiano Designation: IGP Roccamonfina Bianco Vinification: Spontaneous fermentation in amphora, with skin maceration for about 8 days, to enhance the varietal and territorial characteristics. Aging: 9 months in terracotta amphorae, followed by 2 months in bottle. Alcohol content: 12% Tasting notes Color: Intense straw yellow with golden reflections. Aroma: Fruity aromas of white peach, lychee, and citrus, enriched by a light mineral note that recalls the volcanic terroir. Taste: Elegant and balanced, with fresh acidity and a long persistence, inviting the next sip. Food pairings A versatile and refined wine, perfect for many occasions: Fish dishes: Excellent with baked sea bream, grilled squid, or fish carpaccio. White meats: Ideal with roast chicken or lemon turkey. Fresh cheeses: Perfect with ricotta, goat cheese, or buffalo mozzarella from Campania. Curiosity The name "La Monade" recalls the philosophical concept of unity and totality, reflecting Enoz's natural and non-interventionist approach.
