Description
A handcrafted white wine that celebrates the purity of Falanghina and the unique character of the Campanian volcanic territory. Cultivation area The vineyards are located in Sessa Aurunca, in the province of Caserta, Campania, in the ancient area of Ager Falernus, at the foot of the extinct Roccamonfina volcano. The volcanic soils, rich in lapilli, pumice, and clay, and the altitude of about 280 meters above sea level, give the wine distinctive minerality and freshness. Cultivation practices The Enoz winery adopts an organic and biodynamic approach, ensuring sustainable vineyard management. In the cellar, fermentations are spontaneous with indigenous yeasts, without clarifications or filtrations. The aging takes place in terracotta amphorae, a method that respects ancient traditions and enhances the purity of the grape variety. Technical characteristics Grape variety: 100% Falanghina Designation: IGP Roccamonfina Bianco Vinification: Spontaneous fermentation in amphora with skin maceration for about 6 days, to enhance the varietal and territorial characteristics. Aging: 8 months in terracotta amphorae. Alcohol content: 12.5% Tasting notes Color: Straw yellow with golden reflections. Aroma: Aromas of ripe yellow fruit, such as peach and apricot, with distinct mineral nuances that recall the volcanic terroir. Taste: Clean, fresh, and savory, with a pleasant mineral persistence that invites the next sip. Food pairings A versatile and refined wine, perfect for many occasions: Fish main courses: Ideal with baked sea bass, foil-baked sea bream, or stuffed squid. Fresh cheeses: Excellent with ricotta, goat cheese, and buffalo mozzarella from Campania. Light first courses: Perfect with vegetable risottos or pasta with clams and lemon. Curiosities The name "L'Attimo" reflects the intention to capture the essence of the moment through a natural and non-interventionist approach. The aging in amphora allows the wine to develop spontaneously and authentically, fully expressing the purity of Falanghina and the uniqueness of the Campanian terroir.
