At about 400 meters above sea level, these vineyards are on limestone soils that give the wine extraordinary freshness and minerality. Cultivation practices Nicola Gatta embraces the principles of biodynamics, with a strict focus on sustainability. No herbicides or synthetic chemicals are used. The winemaking is natural, with spontaneous fermentations and no clarifiers or stabilizers, to preserve the integrity and purity of the wine. Technical characteristics Grape variety: 70% Chardonnay, 30% Pinot Noir Winemaking: Spontaneous fermentation with indigenous yeasts in steel, to preserve the varietal characters. Aging: 40 months on the lees, corresponding to "40 moons", which enrich the aromatic profile and add complexity. Dosage: Extra Brut (no added sugars). Alcohol content: ~12.5%.
