Area and precise location of cultivation: The grapes come from the vineyards of Poggio Piglia, located in the municipality of Chiusi, in the province of Siena, Tuscany. This area is characterized by clay and sandy soils, ideal for the cultivation of white varieties. Cultivation practices: Salcheto adopts organic and biodynamic farming methods, without the use of added sulfites or other chemical additives. Fermentation occurs spontaneously with indigenous yeasts, and the wine undergoes no filtration or clarification, maintaining its natural integrity. Technical characteristics: Grape varieties: Trebbiano and Malvasia. Vinification: The grapes, harvested at the first signs of noble rot, ferment in tonneaux without the addition of sulfites or other additives. Aging: 12 months in tonneaux, followed by 6 months in bottle. Tasting notes: Color: Intense golden yellow with amber reflections. Aroma: Rich and broad, with hints of dried apricot, acacia honey, toasted hazelnuts, caramel, dried fruit, aromatic herbs, and flint. Taste: Soft and warm, consistent with the aroma, crossed by a beautiful fresh vein and with long persistence. Food pairings: Thanks to its versatility, it pairs well with both sweet and savory dishes. Ideal with blue cheeses, desserts based on dried fruit, and dry pastries. Also excellent as an aperitif or meditation wine. Curiosity: The Obvius Giallo Oro is produced following the method of the famous French Sauternes, with the attack of noble rot (Botrytis cinerea) which gives the wine aromatic complexity and natural sweetness. With this wine, Salcheto offers a Tuscan interpretation of this tradition, maintaining a natural and sustainable approach.
