SoloUva is both the name of the producer and the method used for winemaking. This approach, developed in Franciacorta by Giovanni Arcari, Nico Danesi, and Andrea Rudelli, relies exclusively on the use of the natural sugars of the grapes, without the addition of exogenous sugars like sucrose. Area and precise location of cultivation: The grapes come from vineyards located in the Franciacorta area, in Lombardy. These lands are rich in morainic and clay soils, ideal for cultivating the traditional varieties of the area. Cultivation practices: The method involves harvesting at full phenolic ripeness, which allows for a natural balance between sugars and acidity. The processing respects the principles of sustainability and authenticity, ensuring a process as natural as possible. Technical characteristics of the SoloUva Method: Harvesting and winemaking: The grapes are harvested at phenolic maturity. The must, obtained from the same grapes, is used both for fermentation and for the final dosage. Aging: The wines are aged on the lees, according to the traditional Metodo Classico, to enhance their complexity and freshness. Tasting notes: Color: Straw yellow with golden reflections. Aroma: Hints of white flowers, fresh fruit, and a slight note of bread crust. Taste: Fresh, balanced, with a nice minerality and a pleasant persistence. Food pairings: Open lasagnetta with chickpeas and seafood: The freshness and acidity of the wine balance the creaminess of the chickpeas and the savoriness of the seafood, creating a harmony of flavors.
