Gentle pressing of the grapes, fermentation in steel at controlled temperature. After fermentation, the wine is kept in contact with the yeasts through a batonage operation. The aging on the lees is 24-48 months. Obtained from the best bunches of Chardonnay, from which only 1500 bottles are produced. The color is pale golden yellow with lemon yellow reflections; very fine and persistent perlage. On the nose, there are notes of acacia honey, fresh roses, poppy, lime tree, accompanied by aromas of apple and white peach, with a mineral finish in purity and iodized and limestone notes. On the palate, it is fresh, with a creamy and fine effervescence, and a light finish with notes of brioche bread and citrus, iodized. It leaves a caressing sensation and great delicacy. Recommended pairing: mixed appetizers, especially seafood, fish dishes, sushi and sashimi, fish fry or fish tartare. Recommended temperature: 8-10° C.
